This recipe yields 2 quarts I picked this up at a country club i worked in
1)(4lbs) can tuna of your choice
2) 2 cups diced white onion
3) 2 cup dice celery
4) 2 lemon the juice and zest
5) 2 tbsp lemon pepper spice
6)1 tbsp all purpose seasoning
7) 3 cups heavy mayonnaise
8) salt and pepper to your taste
combine all ingredients in a bowl and mix until everything is completely combined. As a extra tip if you do not have a micro plain to zest the lemons try using your four sided box grader that you would use to grade cheese and just use the side with the smallest wholes. make sure to refrigerate this as soon as your are finished making.
